Ingredients:

Nori seaweed sheets
Sushi rice
Avocado
Imitation crab meat

Instructions:

Cook the Rice: Rinse 1 cup of sushi rice in cold water several times until the water runs clear. Drain the rice and place it in a saucepan with 1 1/4 cups of water. Cover the saucepan and bring the water to a boil. Reduce the heat to low and let the rice simmer for 18 minutes. Turn off the heat and let the rice sit for 10 minutes.

Make the Rice Seasoning: In a small saucepan, mix 3 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Heat the mixture until the sugar and salt have dissolved.

Season the Rice: Transfer the cooked rice to a large bowl and add the rice seasoning to the rice. Mix the rice and the seasoning together until the rice is evenly coated. Let the rice cool to room temperature.

Prepare the Avocado: Slice the avocado lengthwise and remove the pit. Cut the avocado into thin slices.

Make the Sauce: In a small bowl, mix together 3 tablespoons of mayo and 1 teaspoon of Sriracha. Set aside.

Roll the Sushi: Lift the bottom of the sushi mat and fold it over the filling. Use the mat to gently press down on the filling and shape the roll. Continue rolling the sushi until you reach the border of rice at the top of the Nori sheet. Moisten the border with a little bit of water to help seal the roll.

Cut the Sushi: Use a sharp knife to cut the roll into 8 pieces. Serve the sushi rolls with soy sauce and wasabi.
