This month we were honored to attend the Noble Wine & Dine Dinner at The Resort at Pelican Hills in Newport Beach. This extraordinary dinner by celebrated Chef Curtis Stone featured seven remarkable courses, one of which was a Creamy White Onion Soup. Inspired by how much we enjoyed this meal; we've crafted our own to be paired with the Lithology Chardonnay we enjoyed on the occasion. 


4 large white onions, thinly sliced
2 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh chives, chopped (for garnish)
Fresh parsley, chopped (for garnish)
Crusty bread or croutons (optional, for serving)

Prepare the Onions: Begin by slicing the white onions thinly. In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and sauté gently until they turn soft and golden brown, stirring occasionally. This process may take around 20-25 minutes, allowing the onions to caramelize and develop their natural sweetness.

Infuse with Aromatics: Once the onions have caramelized, add the minced garlic to the pot and sauté for an additional 2-3 minutes until fragrant. Be cautious not to let the garlic brown too much, as it can impart a bitter taste.

Simmer with Broth: Pour in the vegetable or chicken broth, stirring to combine with the caramelized onions and garlic. Bring the mixture to a gentle simmer, allowing the flavors to meld together beautifully. Let it simmer for about 15-20 minutes to allow the onions to fully absorb the savory essence of the broth.

Blend to Creamy Perfection: Using an immersion blender or transferring the soup in batches to a countertop blender, carefully puree the soup until smooth and velvety in texture. Return the blended soup to the pot over low heat.

Add Cream and Herbs: Stir in the heavy cream, dried thyme, oregano, and rosemary, infusing the soup with layers of aromatic richness. Season with salt and pepper to taste, adjusting the seasoning according to your preferences.

Garnish and Serve: Ladle the creamy white onion soup into bowls, garnishing each serving with a sprinkle of freshly chopped chives and parsley. For an extra touch of indulgence, serve the soup alongside slices of crusty bread or top it with homemade croutons for added texture.
